Greatest Hits June 13, 2009 – Clean Living

So this post is what I am going to sarcastically call a greatest hit. I usually have 4-5 posts saved on the server that I started writing before I realized that it was too self-serving, preachy, whiny, annoying or for some other reason wasn’t ready to be posted (probably should re-classify all my posts as greatest hits then, huh?). So now I can look at it as an opportunity to have a blog post when I just don’t feel like writing and I haven’t written anything in a long time. Enjoy and thanks for reading.

So in case you didn’t know, weight loss is a process. Especially drastic weight loss. It’s a lifestyle change. I didn’t start out so many months ago, (October 2008 to be exact) just jumping full bore into a weight loss diet and exercise plan. I would have crashed and burned immediately if I did. I definitely takes the willpower of a superhuman to do that and trust me, I am no superhuman.
Anyway, to get back to my point, it was a process…
A process of changing little habits here and there until I was eating cleanly and exercising regularly. It was a process of switching out the regular sodas for diet sodas. Ya, I went through a phase where I thought I could give up the sodas completely and switch to tea but that was short-lived. So now I am completely drinking diet soda, zero calories. You really have no idea how many calories are in that super big gulp you drink daily….trust me, I didn’t.
It was a process of stopping the super sizing of meals at fast food joints. I still eat fast food from the worst possible place (McDonalds) about once a week, but when you start thinking about it in terms of a balanced diet and portion control, it takes on a new quality. Not to suggest that it’s any better for you, but it’s a matter of fuel for your body. And you can look at those days as “Well, my fuel quality today was bad so I can expect a bad workout.” 9 times out of 10, that will probably be true unless you choose the lightest, most healthful options available to you.
Again, it’s a process and I leave you now with one of my end results from the process…my absolute favorite breakfast.

Scrambled Eggs with Sausage and Veggies
crack 2 eggs into a medium bowl,
pour about a 1/4 cup of milk (more or less depending on how much protein you feel you need today) into the bowl and scramble until smooth and solid yellow.

Dice the following:
Red onion
Mushrooms
Sausage (I used Turkey sausage as it is lower in fat but really, it’s no big deal)

Take the sausage, mushrooms, and onion and sautee in a small frying pan (use either real butter and not margarine, or olive oil) until the onions are clear. Most sausage is fully cooked and just needs to be heated but if you are using raw sausage, use the brownness of it as your gauge.

Pour in your egg and milk mixture and let cook for a few minutes. Basically, you want the eggs to get nice and fluffy.

While your eggs are cooking, dice some tomato and spinach…, basically as small as you like but since this is the more moist ingredients, you want to add them last. At least, I always add them last as not to oversaturate the eggs with moisture.

Throw the tomato and spinach into the pan and mix thoroughly with your eggs, sausage, onion, and mushroom mixture, which should be totally fluffy and nearly ready to eat (hey, everyone likes their eggs a certain level of done-ness so YMMV)

After it’s all mixed in and looking BEAUTIFULLY COLORFUL, place it on a plate and proceed to slice fresh avocado onto the entire meal. Well, if you’re feeling really fatty, grate some cheese onto that bad boy as well.

Add some toast to the mix and some fruit on the side and you’ve got yourself what I consider to be the perfect breakfast. A few good protein sources (sausage, eggs, milk, cheese) and plenty of good vegetables (spinach, mushrooms, onions) as well as fiber (avocado, toast), and some fruit.

And damnit, it’s the most delicious thing ever!!! NOM NOM NOM!!!
